Between my perfect pancakes and the best french toast, breakfast has recently become my favorite meal of the day. And with this new addition to my repertoire, things are getting dangerously delicious.
When I went down to Texas to visit my family for the holidays, I had a lot of mouths to feed. Pancakes and french toast are good options but when you are feeding a large crowd you need something that is quick and easy. This hootenanny recipe was perfect! It uses ingredients you already have in your cupboards, there is little prep time, practically no dishes to clean and it’s ready to eat in under 30 minutes. What makes this even better is that people can dress it up as much or as little as they like. It is great with syrup, powdered sugar, fruit or enjoy it simply plain.
Ingredients
1 cup all-purpose flour
1 cup milk (I used 2% but any milk should do)
6 eggs
1/4 teaspoon salt
1/4 cup butter melted
Preparation
Preheat oven to 400 degrees F.
Mix ingredients together in a medium bowl. Pour batter into a greased 9×13 pan. Then pour butter over the top. Do not mix. Bake for 25 minutes.
Cut into pieces, dress with your favorite topping and serve.

The texture of the final product is light and fluffy and reminds me a little bit of Yorkshire pudding. Unlike other breakfast options, the hootenanny is packed full of protein. Therefore it is sure to keep you satisfied. It is also not as sweet as pancakes or french toast so you don’t feel as guilty enjoying yourself. Like all my breakfast dishes, I like to serve it with a side of crispy bacon. Yum…

I make this all the time! Thank you for sharing this… I started using whole wheat flour recently and icut down the butter by half and still is just as yummy.
After it is done baking I cut it in half ans save the rest for another day. I reheat it in the toaster oven and it fluffs again as the eggs reheat. (still its just as good the second day!) xoxo
