Grapefruit Poppy Seed Bread

If you have ever dreamed of a marriage between my grapefruit yogurt cake and my poppy seed cake, your dream has come true.  This Grapefruit Poppy Seed Bread is delightfully moist and wonderfully tangy.  It is a perfect way to start your morning, paired with a warm cup of coffee or to be enjoyed with your afternoon tea.

I first came across this recipe on Pinterest (I’m sure you’re not surprised).  And as excited as I was to find a new way to use my fresh picked grapefruits, I was even more excited to discover the blog in which this recipe originated.  This recipe was created by Kimberly Hasselbrink from The Year In Food.  What I love most about her blog is that all of her recipes are revolved around seasonal foods.  A girl after my own heart!  And not only does she have killer recipes, but she offers monthly seasonal food guides.  And for someone who can’t get enough of seasonal produce, this blog has just become my bff!

Ingredients

1 cup all-purpose flour

1 cup while whole wheat flour

1 cup sugar

3 tablespoons poppy seeds

2 teaspoons baking powder

1/2 teaspoon sea salt

1 cup low-fat Greek yogurt

1/4 cup olive oil

1/3 cup grapefruit juice

1 tablespoon grapefruit zest

Preparation

Preheat oven to 350 degrees.

In a large mixing bowl, whisk together al of the dry ingredients.  In a separate bowl, combine the wet ingredients until blended.  Slowly fold the wet ingredients into the dry, mixing.

Grease a 9×5 inch loaf pan.  Spoon batter into pan.  Bake for about 65 minutes.  Insert a toothpick into the bread to see if it’s done; if it comes out clean, the bread is ready.  Allow to cool for at least 5 minutes before serving.

Can be kept at room temperature for 2-3 days.  If you haven’t finished all of it by then, place the rest in the fridge or freezer.

What is interesting about this recipe is that there is no butter or eggs.  But the yogurt and oil do a great job at keeping this loaf moist.  The grapefruit gives the bread a nice hint of flavor, and is in no way overpowering.  Unlike my original grapefruit cake, this recipe is far less sweet, which makes is a good option for a quick breakfast or snack.
