What’s in the Box? #16

It’s the first Wednesday in March and for some reason I feel like singing…”If you’re happy and you know it clap your hands *clap, clap*.  If you’re happy and you know it clap your hands *clap, clap*.  If you’re happy and you know it then your face will surely show it. If you’re happy and you know it clap your hands *clap, clap*”!.

Ok, don’t know where that came from, but obviously I am happy :)  And I am sure my box has something to do with it…

So many beautiful fruits and vegetables, it’s hard to know where to begin.  But I guess I will start with the beets.  Holy moly the beets! Is that not the biggest beet you have ever seen in your life!  And it is pink.  Not red like your average beet but hot freaking pink!  This moment calls for more than just your normal beet fritter.  I feel like these beets need something a little more special.  I just don’t know what yet.  I am still in awe of the size of that thing!

Boy do I love spinach.  So delicate, so sweet.  I normally enjoy sautéing it with some shallots or onions, but I think I am going to try something new this time.  Since I seem to be on a soup kick lately, I think I am going to give this recipe a try.  Plus it calls for leeks and garlic, so it is a perfect recipe for this weeks box.  As always, I like to serve my soup with a side salad.  And this romaine lettuce is large and in charge!  I might get a few sittings out of it.  And because I love to have a little color in my salads, I will be adding some shredded carrots and possibly some avocados.  Yum!

I am loving these plump, delicious strawberries.  Harper and I have been enjoying them for breakfast.  And you know what else Harper is also into now?  Citrus.  I have always offered her some of mine, but she was never interested until recently.  And these mandarins are perfect because they are just her size.  They are a great snack on the go.  Just toss a few on your purse and you are all set!

And then there are some Brussels sprouts.  Or should I say, were.  They were the first to go.  I roasted those babies up so quick they didn’t know what hit them.  I could have eaten just those for dinner.  I only went back for seconds, thirds and possibly fourths.  Love those things!
