It’s the last Wednesday in June and the summer is flying by. Our weeks have been busy with music classes, family outings and lots of time outdoors. We have been taking full advantage of the warm weather and long days and are enjoying evening trips to the park or swinging on our back porch while Freddie fires up the grill. Summers are truly the best.
Our link party continues to grow as the weeks go by. Last week we had 69 link ups! And I drooled over every one. I only wish there was more hours in the day, more days in the week, and more room in my tummy to enjoy each and every recipe that was shared. You all are some awesome produce lovers! I am truly inspired. Thank you for linking up week after week. I hope you are having as much fun as I am.
And now onto the goods…
So much goodness in one place, it’s hard to know where to start. But the beets are jumping out at me. Probably because in last week’s party we had beet pancakes and beet red velvet cupcakes. Beets have never tasted so good! I can’t wait to try both recipes. I love when I get to make something new and different.
The blueberries and peaches won’t last long. In fact, Harper has already grabbed a handful of the blueberries for herself. And they are just how I like them, crunchy and sweet! I never have the heart to make anything with the blueberries because they are just too delicious on their own. But we have plans to go blueberry picking soon. So once I am up to my knees in blueberries, then I might go ahead and whip up a sweet treat.
We are having company over for dinner tomorrow night and I am trying to decide between serving the green beans or the broccoli. I happen to love both. I am sort of famous for my green beans, but broccoli might work better with my main dish. I am hoping to sneak in some pictures and share the recipe with the rest of you, so I don’t want to reveal the recipe for the main dish quite yet. But I will tell you that it includes plums…and it’s amazing :)
For the lettuce, I would love to try a lettuce wrap type of meal. There have been many recipes shared through the link party that it has inspired me to think differently about my lettuce. Can’t wait to see how it turns out.
As much as I love my Turkey Burgers and Zucchini Fries, I am looking forward to making a new dish with the zucchini. Again, there have been so many wonderful ideas posted, it’s hard to decide where to start. But the good news is, no matter what I choose, my tummy will be happy. For the carrots, I am going to stick with roasting. I was so impressed by my last batch, these little gems will have the same fate :)
