As What’s in the Box celebrates the last week of its 30′s, it has never looked so good. No need for nips, tucks or Botox parties, when you are all natural, organic, local and in season, you tend to stay in shape and remain fresh :) And this week’s box is reason in itself to party. But more about the contents a little later.
First, let’s review the happenings of #38. Last week we had a total of 51 link ups. Salad seemed to be the magic theme. And these weren’t just any ordinary salads. These were fancy salads. These salads were made with Roasted Beets and Goat Cheese, Watermelon, Tomato, Feta & Arugula, Buffalo Chicken, and Garlic Potatoes. Makes you want a salad, right? I love how innovative one can get when they are faced with a box of fresh, local and organic produce. Brings out the best chef in all of us. Keep your delicious ideas coming. You inspire me with your creativity. And I appreciate your ongoing participation.
Ok…now it’s time for the big reveal…drumroll, please?
Ta-Dah! Lemon cucumbers :) My favorite summertime snack…yum! I have been waiting all season for these, and I am so thrilled to finally sink my teeth in one. If you have never had a lemon cucumber before, you need to. They are quite possibly the most refreshing, sweet and delicious piece of produce on the planet. My cousin used to grow them in her garden and would share her harvest with me. A.MAZ.ING! Can’t wait to enjoy every last bite.
Something else I will be hoarding enjoying this week are those nectarines. I know the season will be coming to an end soon so any chance I get to savor the juiciness of a nectarine is a moment of heaven.
I just love all of the fanciness that is going on with these veggies. Like the tomatoes. Has anyone ever heard of black trifele tomatoes before? I had no idea there was such a thing. But then again, I have never claimed to be a tomato connoisseur. They will be perfect with the fresh basil and some fresh burrata cheese. Yum!
And then there is the Romanesco squash. A momma and baby version, if you will. Pretty much a fancier version of a zucchini. This will come in very handy as I start back with another Clean Eating plan on Monday. Zucchini is on the menu for next week as is lettuce, celery, pluots, apples and broccoli. Stay tuned for more delicious and clean eats next week :)

I linked a really easy Eggplant Parmesan–how can you not have an eggplant in your box. Both of my CSAs are producing tons. Next week, I’ll do a plum tart if it turns out as good as it looks. I am always envious of all your beautiful fruit!

I have tried to create a button many times. WordPress makes it hard to link the text box with the code. Needless to say all of my efforts have been unsuccessful. In order to get it done I would need to hire someone who knows more about computers than I do. Looking into that. In the meantime, you can grab my “What’s in the Box” image and link it back to my page. Sorry :(

Hm, I wonder why WordPress makes it difficult!
Who knows? They make a lot of stuff difficult :( My blogspot blogger friends can do tons of cool things…but it’s not worth it for me to go through all the hassle. Hope I figure it out though…
I used to be on blogger. . . I like wordpress so much more though. :/ I’m curious, why won’t just making an image that links to your post work, and then creating a text box that allows people to copy and paste it? I’ve seen this around wordpress.
Sounds like a good idea…would you be able to teach me how to do it? I have no clue when it comes to programming stuff…I just like to write :)

Yep, apples are an indication that autumn is right around the corner. I like to sweat the squash with olive oil and garlic and then blend it and freeze it. That way I can have a very simple soup or pasta sauce later.

They are pretty much the most delicious thing ever :) You might be able to find them at your local farmer’s market…
Plain cucumbers (or sometimes dipped in soy sauce) are one of my favorite foods. I have never heard of lemon cucumbers, and I will definitely be on the lookout now! Jealous of your nectarines! I had some a few weeks ago and may just have to go buy some at Whole Foods to hold me over … there is nothing better than the first bite of a perfectly ripe nectarine!
Love the idea of cucumbers dipped in soy sauce! Lemon cucumbers are divine :) Check your local farmer’s market. I have never seen them in grocery stores…even whole foods.
Nectarines are pure heaven. I’ll take them however they come. Might have to sneak in a few from the store before the season is over :)
