Guest Post: November Foodie Pen Pal Reveal

As I mentioned in my original September Foodie Pen Pal Reveal Post, the Foodie Pen Pal Program is open to blog readers as well as bloggers. This month I was paired with a blog reader named Leigh Ann and was more than thrilled to pack up a box of goodies to send for her fourth Foodie Pen Pal experience. Since Leigh Ann doesn’t have a blog of her own to share her goodies on (although I LOVE her writing and encourage her to start one), she has offered to write a short guest post about what she received (and she even included a few pics!).

So without further ado, ladies and gentlemen, I present to you, Leigh Ann Russo…

Each month I have my Foodie Pen Pal send my package to me at work, since I am usually there when the mailman delivers each day. However this month I was attending a workshop outside of work the day the package arrived. I work in a shop that gets deliveries almost everyday, so my associate opened the package thinking it was merchandise to check in and inventory. When she realized what it was, she sent me this text in the middle of the afternoon, “U have a package of goodies!” I was so excited…I knew my FPP package had arrived!
When I got to work the next day, I opened the package and was blown away. Heather had put together an amazing assortment of fall flavors as well as those that I had told her that I adore. The presentation was so colorful and creative!!! She had attached a hand written note on a colored paper fall leaf to each item…describing it and/or why she had chosen it for me. I could tell she had put in a tremendous amount of time and thought into putting this package together for me and I was truly touched.
Here are the contents of my package:
Homemade Cranberry Almond Granola Bars…these are incredible. I am eating one right now with a cup of tea. I only have 2 left so I am glad she included the recipe so I can enjoy them again and again.
Pumpkin Pie Bar Mix…you had me at “pumpkin”. I LOVE pumpkin and can’t wait to make these for a delicious treat for me and my honey.
Rob’s Really Good Swirling Mango Beverage, which I have never tried before, but I am super intrigued by. Mango is another flavor that I absolutely adore. They are so exotic and luscious.
Trader Joe’s (now who doesn’t like Trader Joe’s?) Dark Chocolate Covered Coconut Mango Bites. I think I nearly passed out when I saw this. Three of my favorite flavors (other than pumpkin) together in one delicious treat? I think I have reached Nirvana!
Harvest Pasta…fun fall-leaf shaped pasta. I’m half-Italian so I can eat some pasta…yum yum give me some!
Apple Cinnamon and Herb Stuffing Mix. This sounds incredible…I think I might make some stufffed peppers this weekend!
I am truly grateful that Heather was my FPP this month. She really made me feel special and I can’t wait to try out all these fabulous items she selected.
Hands down, Heather is the best FPP a girl could ask for…lucky me :)

Chocolate Beet Muffins

As fond of as I am of my Beet Cake, I think I have adopted a new favorite way to use my garnet red gems.  And it might have something to do with the chocolate…because let’s be honest, who doesn’t love chocolate?  Well wait, my husband isn’t the biggest chocolate fan, but that’s ok…leaves more for me!

But being the trooper that he is, he said he would at least try one to make sure it was “blog worthy”.

Last night after I took the muffins out of the oven, I asked my husband if he wanted to try one.  He said, “Aren’t you going to frost them?”.  To which I replied, “they’re muffins, not cupcakes.  You don’t frost muffins”.  And then I began to think, what’s the difference anyhow?  I mean really, muffins look exactly like cupcakes, only naked!  So I turned to the web to try to find some answers.  Turns out, there is really no definitive answer, but there sure are some funny explanations.

Ingredients

1 1/3 cups whole wheat pastry flour

1/2 cup organic evaporated cane juice

1/4 cup organic brown sugar, packed

1/4 cup cocoa powder

1 1/2 teaspoons baking soda

1 teaspoon cinnamon

Pinch allspice

1/4 teaspoon kosher salt

2 eggs

2/3 cup melted coconut oil

1 teaspoon vanilla extract

1/2 lb beets, peeled, grated

1/2 cup vanilla almond milk, unsweetened

1 small apple, cored, peeled and diced

1/4 cup unsweetened coconut flakes

1/4 cup semi-sweet chocolate chips

Preparation

Preheat oven to 350 and fill 12 muffin tins with liners.

In one bowl mix together the first 8 ingredients.  In another bowl mix together the next 4 ingredients.  Add the wet ingredients to the dry ingredients, mixing until well combined.  Fold in the apple, coconut and chocolate chips and fill muffin cups.  Bake 25-30 minutes until done when cake tester comes out clean.

No exaggeration, these might be the most delicious muffins I have ever tasted.  I love how the coconut oil creates a super silky and smooth texture.  The apples and beets make them ridiculously moist.  And the chocolate takes them to a whole new level of greatness.

The coconut flakes are totally optional.  To be honest, neither Freddie or I are crazy about coconut but you really can’t taste them. After taking his first bite and giving me his verdict, which was a big “yum!”, I asked him what he thought of the coconut flakes.  ”What coconut flakes?”, he replied.  ”Nevermind” :)  So it’s up to you.  But I would recommend you try it before you knock it!

So whether you enjoy these muffins as a part of a complete breakfast, afternoon snack or post dinner treat, you are sure to relish in each and every bite.  And if you end up eating more than one, it’s ok, because not only is it filled with fruits and veggies, it’s a muffin, not a cupcake :)

What’s in the Box? #8

After two weeks without a box, you can imagine how thrilled I was when the delivery man arrived at my doorstep this afternoon. Harper and I just “happened” to be hanging out by the front door when we heard some commotion on the patio. I opened the door with enthusiasm, slightly startling the poor delivery man. I am guessing he has never seen anyone so excited to receive their produce box. I quickly thanked him, wished him a Happy New Year and whisked the box inside to the kitchen table. The reunion was glorious…all of my favs and a whole-lotta green!

My most prized piece of produce this week has got to be those two huge pints of strawberries. I haven’t had much luck finding organic strawberries at any of my local markets, so looking at these beauties put a big smile on my face. I plan on enjoying a handful for breakfast and then using a few more for my strawberry salad because that red leaf lettuce is calling my name.

Funny that we should receive such a beautiful head of broccoli because I was planning on making some for my company tomorrow night. I will be preparing a new chicken dish I found on Pinterest along with some rice pilaf. A side of steamed broccoli tossed with lemon juice, butter and a little salt and pepper will be a perfect way to round out the meal. Oh, and that lovely head of garlic will come in handy too. Especially since pretty much every recipe known to man calls for garlic : )

Having fresh fruits and veggies such as cucumbers, carrots and apples are always a great healthy option for afternoon snacking. The key is to wash, cut and prepare the produce when you first get them so that you don’t gravitate towards less healthier options such as a bag of chips out of ease. I like to keep them in glass containers in front of the fridge so that when I open it up to see what I might be in the mood to eat, they are right in front of my face. I love to dip my apples in fresh almond butter or pair it with a slice of cheese to sneak in some protein. Cucumbers and carrots are always yummy dipped in some hummus.

If you are wondering what the beautiful green and purple bunch of leaves are (or at least I was), it’s Red Russian kale. Before I began subscribing to this weekly service I had no idea how many varieties of kale there were. But the good news is all the varieties are pretty much interchangeable. So I can go ahead and use this form of kale in any of my favorite recipes I currently have on deck.

I am glad to see the butternut squash. My only dilemma is that I have collected so many new recipes that I don’t know where to start. Guess you will have to stay tuned to see which dish I decide to whip up this week:)

I am happy to have my produce box up and running again. I really felt lost without it. Although I think Freddie secretly enjoyed it because then I could make him some of his favorites. I do my best to accommodate his requests but with all the produce that we receive, there is rarely room to divert from the weekly meal plan. I have to say, it is nice to break from your regular routine and freestyle for a little bit. But being back on track makes me feel a bit more organized (or as I used to say orzanized), which helps keep me sane :)
