Mushroom Rice

Mushroom rice with garlic, onion, and fresh parsley — what could beat that? My family loves this dish. This recipe works equally well with white or brown rice, instant or otherwise. It always comes out delicious!

How to Make It

  1. Gather all ingredients.
  2. Melt butter in a saucepan over medium heat. Cook mushrooms, green onion, and garlic in butter until mushrooms are cooked and liquid has evaporated, about 5 minutes.
  3. Stir in chicken broth and rice. Season with parsley, salt, and pepper.
  4. Bring to a boil, then reduce heat. Cover and simmer until liquid is absorbed, about 20 minutes.

  • 2 teaspoons butter

  • 6 mushrooms, coarsely chopped

  • 1 green onion, finely chopped

  • 1 clove garlic, minced

  • 2 cups chicken broth

  • 1 cup uncooked white rice

  • ½ teaspoon chopped fresh parsley

  • salt and pepper to taste
